ITK’s AI documentation

• including an AGENTS.md was helpful for them to get more/better contributions. The actual AGENTS.md is a small entrypoint to other things than live in an `AI/`` folder
• no “co-authored by” for the LLM because LLMs do not have any of the accountability
  • (but on the other hand: Soemtimes it is helpful to know which model was used so that a different model can be used for review – they have different blind spots.)
